1 ripe avocado
2 1/2 tbsp.light cream or yogurt 1 clove garlic,minced 1 1/4 tsp. lemon juice 3/4 cup finely grated cheddar cheese 1 1/4 tsp mustard(not dry) |
1/2 cup fresh bread crumbs
3 green onions,finely chopped fresh ground black pepper 3 tbsp. fresh chopped parsley 1/3 cup chopped pecans |
Cut avocado in half lengthwise and carefully twist it apart.Remove the stone and peel away the skin.Mash the avocado flesh in a medium bowlwith a fork or masher.Stir in the cream or yogurt, garlic,lemon juice,grated cheese,mustard, bread crumbs,onions,and pepper into the mashed avocado.Mix together with a fork until well blended and a thick paste results.
Using your hands, roll teaspoonfuls of the avocado mix into small balls.Spread the parsley on one plate and the pecans on another plate.Roll half the balls in the parsley to coat and the other half into the pecan mixture,pressing the balls slightly in each case.
Refrigerated the coated snacks for 40 minutes before serving.
