Liver and Egg PatŽ | Appetizers |
4 slices bacon
1 lb. beef liver 2 Tbsp. grated onion 2 Tbsp. minced parsley 1 Tbsp. minced green pepper |
a few drops Tabasco
1 tsp. Worcestershire 4 hard boiled eggs salt & pepper to taste 4 Tbsp. mayonnaise |
Cook bacon slicesuntil brown. Remove from pan and add the liver. Brown the liver for 3 minutes. Remove from pan and cut off the skin and remove the tubes. Cut meat into small pieces and put in food processor or grinder.Add broken bacon pieces, bacon fat from pan, onion, parsley,green pepper, Tabasco, Worcestershire , eggs and salt and pepper to taste. Process or grind.
Moisten with mayonnaise and blend thoroughly.
For sandwiches, store in a small jar in the refrigerator until needed. Keeps 1 or 2 weeks.
For a party ball, chop enough parsley finely and put on wax paper; then roll liver mix into a ball and cover ball with chopped parsley. Serve with crackers.
