Shrimp Cucumber Spread | Appetizers |
1/2 medium cucumber
1/2 tsp. salt 8 oz. cooked shrimp 3 tbsp. cream cheese 2 tbsp. light mayonnaise 1/2 tsp. grated lemon rind |
1 tbsp. lemon juice
1/2 tsp. dry mustard 1/4 tsp. pepper 4 tsp. finely chopped dill( or1 tsp. dried dillweed) dill sprigs |
Peel and seed cucumber; shred into sieve. Sprinkle with salt;let stand for 10 minutes. Place in a clean tea towel and squeeze dry; place in bowl. Pat shrimp dry; set a few aside for garnish. In a food processor, purŽe together remaining shrimp, cheese, mayonnaise, lemon rind and juice, mustard and pepper; stir into cucumber along with chopped dill.
Transfer to a shallow serving dish; cover and refrigerate for 1 hour or until chilled.
If you like, garnish bowl with a strip of lemon rind tied in a loose knot.
