Smoked Salmon Snacks Appetizers

1/2 lb. smoked salmon
small pkg. light Phil. cream
cheese
loaf of 2"sq. thin sliced pumpernickel bread

1/2 lb. smoked salmon
Avocado Mousse,1/2 recipe

pumpernickel bread
-----------------
four 9-inch flour tortillas
8 tbsp. softened cream cheese
1/2 lb. thinly sliced smoked salmon
fresh lemon juice
8 tbsp. chopped green onions
8tbsp. or less chopped capers

Divide each slice of bread in two. Spread a little cheese on each slice and top with a very thin slice of smoked salmon

Prepare Mousse according to recipe (halving the recipe ). At serving time, unmold mousse,slice and serve on pieces of pumpernickel bread with a slice of smoked salmon on top.

SMOKED SALMON PINWHEELS: Spread each tortilla with 2 tbsp. softened cream cheese. Cover with 1/4 of the smoked salmon. Squeeze a little lemon juice over salmon.Sprinkle with 2 tbsp. each of onions and capers. Roll up tightly, wrap in saran wrap and chill. Cut on slight diagonal into 1/2 inch slices. Makes about 40.
