Gourmet Marinade Barbecue Cookery

1 large onion, coarsly chopped
3 garlic cloves
a 1" cube of peeled fresh ginger root
1/4 cup soya sauce
1/4 cup honey
1/2 tsp. tabasco sauce
1/4 cup dry red wine
3 tbsp. peanut oil

Can be used for pork, lamb or beef

Mix all ingredients together. Pour over meat to be marinated.(I put the meat in a zip-loc bag and pour the marinade over it ). Marinate 24 hours or more, turning 3 or 4 times. Before barbecuing, pat the meat dry. Use marinade for basting while cooking.

For Texas style pork chops, brown 4" above coals on both sides, basting , until well browned and then raise the grill and continue cooking until well done (about 45 minutes)

For lamb or beef, cook until done to your personal taste, rare, medium or well done.
