Lamb Marinades Barbecue Cookery

Marinade #1 Lamb Chops
1/4 cup lemon juice
1/3 cup veg. oil
1 minced onion
2 tsp. rosemary
1 tsp. chopped parsley
salt to taste
Marinade #2 Lamb Riblets
1/3 cup lemon juice
1/3 cup veg. oil
2 tbsp. Dijon mustard
3 tbsp. dried dill
1 tsp. salt
Marinade #3 Lamb riblets
1 cup plain yogurt
2 garlic cloves,mashed
1 tbsp. cumin,1 tsp. salt
1/4 cup lemon juice
1/3 cup veg. oil

Mix ingredients together and marinate the lamb for 3 hours min'm. Barbecue for 7 - 12 minutes per side depending on thickness.

For 2 1/2 lbs. breast of lamb, trimmed of excess fat and fell removed. Mix ingredients together and marinate lamb in a flat ceramic dish, covered and chilled, for 6 hours or overnight, turning occasionally. Drain the lamb and reserve the marinade. Grillover glowing coals, basting with marinade, for 20 min. on each side or until crisp on the outside and not pink on the inside.Transfer to a cutting board and cut into riblets. Serve.

Prepare as in marinade # 2.
