Place the sugar in a saucepan. Dissolve the coffee granules in water, add to sugar. Bring to a rolling boil and boil 2 minutes. Turn heat as low as possible and simmer 3 minutes, stirring most of the time. Let cool. Stir in the vanilla and brandy until well mixed. Pour into bottles (no filtering needed), cork and set aside, Yield: 2 cups.
