Blueberry Muffins Breads

Edna's Recipe
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup white sugar
1 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 1/2 cups blueberries
1/2 cup melted margerine
1/2 cup milk
2 eggs, slightly beaten
1/2 tsp. vanilla
2 tbsp. sugar

Dredge the blueberries with some of the flour.

Combine the flours, spices, salt , baking powder and sugar.

Beat eggs; add milk, vanilla and combine with margerine.Add liquids to the flour mixture and combine. Do not overmix. Fold in floured blueberries.

Put in buttered muffin tins -2 1/2" diam. Sprinkle with 2 tbsp. sugar. Makes 12 muffins. Cook at 400 F for 15 to 20 minutes.

Edna adds grated lemon rind to the flour.
