Brown Bread Joan's Breads

1 cup rolled oats
3 tsp. salt
2 tsp. margerine
2 cups boiling water
1 tbsp. granulated yeast
1 tsp. sugar
1/2 cup warm water
1/2 cup molasses
4 - 5 cups flour

In the afternoon, mix the oats, salt, margerine and water. Cool. Around suppertime, dissolve the sugar in the warm water; add the yeast and let rise 10 min..Add the molasses to the yeast mixture. Combine the oats and yeast mixtures. Add the flour gradually so that it is well mixed, kneading in the last of the flour. The mixture will be a bit sticky. Put in a well greased large bowl, brush the top with melted margerine, cover with a tea towel and let rise overnight.

(The top of the frig. is a good spot).

In the morning,punch down and divide the dough into 2 or 3 parts. Put into greased bread pans and let rise until double. This takes about 2 hours.

Bake at 350 F for 55 minutes for large loaves. Remove from oven, brush with melted butter and remove from pans to cool.
