Pineapple Nut Bread -Joan's Breads

1/2 cup white sugar
2 tbsp. butter
1 beaten egg
1 cup crushed pineapple, not drained
1/2 tsp. soda
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1/2 tsp. salt
1/2 cup red cherries
1/2 cup chopped nuts

Add the baking soda to the pineapple.

In a food processor, cream butter and sugar. Add egg and mix well. Add pineapple and vanilla and mix well.

Sift together the flour, baking powder and salt. Add to processor and mix just enough to blend. Do not overmix.

Remove to a bowl and fold in the cherries and nuts.

Butter a 4"x9" loaf pan (line with buttered foil, if desired).

Bake in a 350 F oven for 1 hour. Remove from pan and cool on a wire rack.
