TORTE
6 eggs,separated 3/4 cup icing sugar 1 cup finely ground almonds 1/2 cup dry fine bread crumbs OR (1/3 cup crumbs+1/4 cup flour+2/3 cups ground nuts) 2 tbsp. strong black coffee FROSTING |
1/2 cup softened sweet butter
3/4 cup icing sugar 1egg yolk 2 tbsp. cocoa 1 tbsp strong black coffee 1 tsp. rum |
Beat egg yolks and half the sugar until lemon colored and stiff.(10 min. with mixer). Beat egg whites and rest of sugar until very stiff. Combine both mixtures and carefully fold in the rest of the ingredients. Put in a jelly roll pan which has been buttered and covered with wax paper and grease paper. Bake at 350F for 25 to 30 minutes. Cool . Cut in half. Use 1/2 frosting for filling and the other half for the top. If you like really thick frosting, double the frosting recipe. Decorate top with chocolate shot or fine nut crumbs.
FROSTING:
Mix all ingredients and beat until very fluffy.
