MINCEMEAT MIXTURE
2 cups mincemeat 1/2 cup shredded apple 1 tsp. mixed spices(cinnamon, nutmeg or coriander) 2 tbsp. diced citron 2 tbsp. candied orange peal 2 tbsp. candied lemon peal 2 tsp. orange juice 1 tsp. lemon juice 2 tbsp. brandy 1 or 2 tbsp. rum or sherry |
COOKY MIXTURE
1 cup flour 1/4 tsp. each salt, soda, nutmeg 1/2 tsp. cinnamon 1/2 cup coursely chopped nuts 1/3 cup softened butter 1/3 cup dark brown sugar,packed 1 egg 1/2 cup mincemeat mixture 1 tbsp. sour cream or buttermilk |
For mincemeat mixture, combine all ingredients together and mix well. Cover and refrigerate for 24 or more hours.
This mix can also be used in pies.
COOKIES:
Mix dry ingredients together; add nuts and set aside. Cream butter and sugar;Add egg and beat. Combine mixtures. Add mincemeat and sour cream and fold in by hand.
Lightly butter cooky sheets and line with foil. Lightly grease the foil.Drop the dough by teaspoonfuls, leaving 2" between mounds. Cook at 400 F for 10 to 12 minutes. Cool slightly and remove to wire racks.
GLAZE:
Thoroughly mix together; 1 1/2 cups icing sugar, dash of salt, 1 tsp. vanilla, 2 tbsp. melted butter, 2 tbsp. cream. Put a little blob on each cooky and press 1/2 a glaced cherry into it.
