Cinnamon Apple Cake Cakes & Cookies
9" round or tube pan, buttered
3 eggs
1 3/4 cup sugar
1 cup oil
2 cups flour
1 tsp. baking powder
1/4 tsp. salt
2 tsp. cinnamon
2 tsp. vanilla 		1/2 cup chopped walnuts
4 cups apples, peeled and thinly sliced
CREAM CHEESE ICING
6 oz. cream cheese
1/4 cup melted butter
2 cups icing sugar
1 tsp. lemon juice
1/2 tsp. vanilla

Preheat oven to 325 F..

Whip on high speed of mixter until light.

Add very slowly, continuing to beat.

Add very gradually, continuing to beat.

Mix together flour, baking powder, salt, cinnamon . Add mixture to egg mixture all at once. Stir to mix. Stir in vanilla.

Fold batter into walnuts and apples. Bake for 50 minutes. Ice.

Beat cheese until smooth. Stir in melted butter slowly.

Add and beat until smooth.

Serves 10 - 12.
