Date Bars Cakes & Cookies

1 1/2 cups pitted dates
1/1/2 cups orange juice
2 1/2 cups all purpose flour
1/2 tsp. salt
1 1/2 cups firmly packed light brown sugar
1 1/2 cups sweet butter,cut into pieces
1 cup sweetened flaked coconut
1 cup chopped walnuts
1 1/2 cups old fashioned rolled oats

(1) Simmer dates in orange juice for 30 minutes,stirring often,until thickened.

(2)In a food processor combine the flour,salt and sugar and blend by pulsing several times. Add the cut up butter to the processor and process on *3 until mixture is like corn meal. Watch carefully. Remove to a large bowl.

(3)To the flour-sugar-butter mix add the coconut,walnuts and oats and mix thoroughly with a spoon or spatula.

(4)Lightly butter a 9"x13" pan and press half the mixture into the bottom. Put a wax paper over and flatten mix gently with a rolling pin. Remove paper and spread the date mixture over the dough mix to within 1/2" of the edges. Top with remaining dough mixture and flatten gently(with rolling pin and wax paper).

(5) Bake the mixture in a 350F oven for 40 to 45 minutes or until it is golden.

(6) Cool on a wire rack completely and then cut into bars.
