Date Lebkuchen Cakes & Cookies

CAKE PART
1 lb. dates,cut small
the peel and juice from1 lemon and 1 orange
4 eggs
1 lb. brown sugar
2 cups flour
1/4 tsp. salt
1 tsp. instant coffee
2 tsp. baking powder
2 tsp. cinnamon
1 cup chopped nut meats
FROSTING
1/4 cup orange juice
icing sugar 1 tsp. melted butter
whole pecans

Grate the peel and extract the juice from the lemon and the orange. Add the chopped dates. Cover and let stand at least 12 hours. Butter a 12" x 15"pan. Set the oven at 350F to 375F.

Beat the eggs until light and fluffy. Gradually beat in the brown sugar. Sift together the flour, salt, coffee, baking powder and cinnamon; add to the egg-sugar mix. Stir in the date mixture and the chopped nuts. Spread in the pan and bake 30 minutes. Cool in the pan.

Put the orange juice in a bowl and gradually add enough icing sugar until thick enough to spread. Stir in the melted butter. Spread over date lebkuchen. Cut into 1 1/2" squares. Decorate each square with a whole pecan. Makes 80 squares.
