Mother Mansen's Shortbread Bars Cakes & Cookies

1 lb. unsalted butter
2 cups sugar
4 eggs
2 cups sugar
1 tsp. vanilla
1/2 cup chopped, blanched almonds
1/4 cup currants

Preheat oven to 375 F .Grease 12"x18" jelly roll pan with unsalted butter.

Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Beat in flour and vanilla. Spread batter evenly on pan. Sprinkle surface with almonds and currants. Bake 20 to 25 minutes until surface is light gold.Cut in small triangles or squares. Cool. Store in air tight container.

This recipe came from Ann Price. She made 1/2 the recipe and cooked it in an 8"x 8" pan and cooked it longer than suggested.
