4 cups thinly sliced zucchini
1 cup chopped onion 1/4 cup butter or margerine or oil equivalent 2 eggs |
1 tsp. each of oregano, basil, garlic, salt & pepper
1/2 cup chopped fresh parsley 2 cups grated mozarella cheese |
Heat fry pan to moderate. Add butter and when bubbly add zucchini slices. Sautˇ zucchini a little and add the chopped onion. Continue sautˇing until the vegetables are soft. Set aside.
Beat the eggs for 5 minutes; add the spices and parsley. Fold in the grated cheese; then fold in the cooked vegetables. Put in a greased 9" or 10" quiche pan.
Bake in a 375¼F oven for 20 minutes. Cool 10 minutes at least before cutting into wedges.
This dish may serve 4 as a lunch dish with a side salad, or as an appetizer when cut into smaller wedges.
