3 cups blueberries(4)
1/2 cup sugar(2/3) 1/4 cup water(1/4) 1/2 tsp. cinnamon(3/4) 1/8 tsp. nutmeg(1/4) 2 tsp. grated lemon rind(3) 1 1/2 cups flour(2) 2 tsp. baking powder(3) |
1/2 tsp. salt
1/2 cup sugar(2/3) 1 well beaten egg(2) 1/2 cup milk(same) 1/2 cup melted butter(2/3) vanilla ice cream OR Maple Cream |
Cook blueberries with sugar and water. Add cinnamon, nutmeg and lemon rind. Pour into a well greased 9" square casserole or baking dish.
Sift flour, baking powder, sugar and salt together. Make a well in the center. Mix in egg, milk and melted butter. Stir all together very gently.Spread over blueberries. Bake in a 350F oven for 25 to 30 minutes or until top os brown and crusty.
Serve warm with ice cream. Serves 6 to 8.
NOTE: For a larger amount(say 8 to 12), use amounts in brackets and bake in a 9" x 13" casserole. Serve with Maple Cream for a special dessert.
