Blueberry Pudding "Edna's" Desserts

PUDDING
1/4 cup butter
1 cup sugar
1 egg beaten
2 1/2 cups sifted flour
3 tsp. baking powder
1/2 tsp. nutmeg
1 cup milk
grated rind of 1 lemon
1 1/2 cups blueberries, floured
1/2 cup sugar + 1/2 tsp. cinnamon,mixed
SAUCE
1 cup blueberries
1/2 cup apple juice
1tbsp. cornstarch
2 tbsp. cold water

Grease a 9" square cake pan

Cream butter, blend in sugar, add beaten egg and continue beating until light and fluffy. Sift together the flour, baking powder and nutmeg. Add alternately with the milk and lemon rind to the creamed mixture. Fold blueberries lightly into batter. Spoon into prepared cake pan. Sprinkle sugar-cinnamon mixture on top of batter and bake at 375 F oven for 1 hour. Serve hot with blueberry sauce or whipped cream or ice cream.

BLUEBERRY SAUCE

Combine blueberries and apple sauce in a saucepan and set over medium heat. Blend cornstarch and water and add a few tbsp. of sauce mix to it .Gradually add this to the sauce mixture, stirring constantly and cooking over medium heat until sauce thickens, clears and comes to a boil. Simmer 1 or2 minutes, remove from heat and serve.
