Cheesecake "Black Forest" Desserts

10" or 11" springform pan, buttered
CHERRY TOPPING
1lb. pitted sour or bing cherries, halfed
1/4 cup kirsch
1/4 cup sugar
CHOCOLATE CRUST
1 1/3 cups crushed chocolate wafer cookies (2/3 of box)
6 Tbsp. soft butter
FILLING
1 1/2 cups melted chocolate chips
1 lb. cream cheese
3/4 cup sugar 3 eggs 1 tsp. vanilla
1Tbsp. kirsch

Preheat oven to 325 F.

Soak cherries in kirsch at least 3 hours or overnight.

In a heavy saucepan add sugar to cherries and bring to boil. Simmer 6 -7 minutes until thickened. Cool, then refrigerate.

Mix with hands or fork until well blended. Press crumbs into bottom of prepared pan and three-quarters of way up sides.Chill 20 minutes.

Melt over hot , not boiling water. Set aside.

Beat cream cheese until smooth. Add sugar and continue beating. Add eggs, one at a time. Add vanilla and kirsch. Add melted chocolate and beat until thick and smooth(4 -5 )mi

CREAM TOPPING

1 cup heavy cream

3 Tbsp. icing sugar

1 1/2 Tbsp kirsch

Pour into crust . Bake 45 - 50 minutes until firm to touch. Cool, then chill.

Whip together until soft peaks form.

To serve, spread cherries over filling and top with kirsch-flavoured cream. Decorate with chocolate curls and extra cherries , if desired.
