4 to 5 tsp. instant coffee
1 1/2 cups hot water 1/2 cup milk 2/3 cup sugar |
1/8 tsp. salt
3 eggs 1/2 tsp. vanilla 1 tbsp. gelatin |
Dissolve coffee in hot water. Mix in milk,1/3 cup sugar and gelatin and heat in top of a double boiler over boiling water until gelatin is dissolved. With a fork beat the egg yolks; add 1/3 cup sugar and salt and mix. Gradually add some of the hot liquid to the egg yolk mix. Then add this to the rest of the hot liquid gradually and blend well. Return to the top of the double boiler and cook over hot, not boiling, water, stirring constantly,until mixture thickens or coats a metal spoon( about 10 minutes). Remove from heat and cool slightly. Meanwhile, beat the egg whites until stiff.
To the egg yolk mix add the vanilla, fold in the beaten whites and put in a chilled mould. Chill for several hours before serving.
