Pavlova Desserts

Butter 8" round of foil or brown paper and dust lightly with cornstarch
SHELL
4 large egg whites
1 tsp. white vinegar
3/4 cup fine white sugar
1 tsp. vanilla
3/4 cup sugar
1 Tbsp. cornstarch
1 tsp. baking powder
pinch salt
1 1/2 cups heavy cream
3 Tbsp. icing sugar

Preheat oven to 225 F.

Using electric mixer, combine egg whites , fine sugar,vanilla and beat on high speed for 10 minutes.

Next, just barely blend in the sugar,cornstarch, baking powder and salt

Place mixture on foil (or paper) round on cookie sheet. Build up outer edge and make centre deep. Bake 1 1/4 hours. Turn off oven and leave in oven until meringue is cool.

Whip until soft peaks form. Pile into centre of shell and top with fresh fruit. Strawberries. kiwi fruit, passion fruit and bananas are the most popular.
