Rich Strawberry Russe Desserts

1/2 white cake mix, or 1 lb. cake
1 box strawberries or
2 cups frozen strawberries
3 env. unflavored gelatin
1/2 cup sugar
1/4 tsp. salt
4 eggs, separated
1 1/2 cups scalded milk
1/4 cup sugar
2 cups whipping cream
2 tbsp. white rum

THE DAY BEFORE

Bake a white cake mix, as directed and use half for this recipe; or, buy a white pound cake.

NEXT DAY

Add gelatin to 1/2 cup of liquid( water or juice from berries + water).Put egg yolks, salt , sugar in top of double boiler and beat with fork.Gradually add scalded milk and cook over very hot (but not boiling) water for 5 minutes.Remove from heat, add dissolved gelatin, stir to mix. Cool and chill. Meanwhile, whip the cream and beat the egg whites with the rest of the sugar. Remove the crust from the cake and cut into 1/2" squares.

When the gelatin mixture mounds, whip with beaters.Add to the whipped cream, fold in egg whites and berries. Place in a chilled mold, carefully placing the cake pieces throughout the dessert. Chill for at least 4 hours. Unmold and decorate with berries and whipped cream or serve with a fruit sauce.
