4 chicken breasts, skinned and boned
1/2 cup chopped almonds MARINADE 1/4 cup sesame oil 1/4 cup light soya sauce 1/2 tsp. sugar |
BATTER
1/2 cup flour 1/2 tsp. baking powder 1 beaten egg white -------------- peanut oil |
Skin and bone chicken breasts. Prepare marinade. Marinate the breasts for 1 hour.
Prepare the batter. Mix the ingredients thoroughly until ribbony-not too thick.
Remove breasts from marinade and pat dry. Put in batter and stir to cover all pieces.
Heat peanut oil for deep frying. When the oil is ready, deep fry chicken pieces for about 3 minutes or until golden. Do not fry too many pieces at once. When chicken is cooked slice each piece into 1" wide slices ( on a slant).
Put cooked chicken on a bed of lettuce and sprinkle ground almonds over. Garnish with lemon slices.
Serves 8 as one of several dishes.
