1 lb. broccoli
2 strip loin steaks cut into 1" x2" x1/4" strips MARINADE 1 tbsp. dark soya sauce 2 tbsp. sesame oil 1 tsp. sugar 1/2 cup+ wine |
dash of pepper
------------ garlic clove 1 tsp.baking soda 1 can mushroom pieces(drained and air dried) 1 1/2 tsp. cornstarch 1/2 cup wine or water |
STEP 1.Cut the beef in strips,remove fat and marinate for 3 to 4 hours.
STEP 2.Cut the broccoli into 3" pieces from top of floweret to stem. Remove tough parts. Wash and let soak in cold salted water for an hour. Drain and rinse.
STEP 3.Bring 2 quarts water to a boil. Add soda, then the broccoli. Cover,bring to a boil and boil for 1 minute. Pour into a colander,rinse with cold water, drain and dry on paper towels. Set aside.
STEP 4.Heat the fry pan or wok. Add 1 tbsp. peanut oil and swirl a garlic clove around to flavor the oil. Remove garlic and quick fry the drained meat to insure uniform browning.Remove.Add drained mushrooms to fry pan and lightly brown. Reduce heat and add the wine-cornstarch mixture. Stir until thickened ( add more liquid if necessary). Add the cooked meat and last, the broccoli. Stir and simmer 1 minute.Serve immediately.
