China; Beef with Snow Peas Foreign Cookery

1 1/2 lbs. round steak cut into
1" x2" x1/4" strips
MARINADE
1 tbsp. dark soya sauce
2 tbsp. sesame oil
1 tsp. sugar
1/2 cup wine or sherry
dash of pepper

garlic
peanut oil
gingerroot
1 lb. pea pods,ends and strings removed
1 tsp. salt
1 tbsp. water
1 cup thinly sliced water chestnuts(canned--drained)
1 tsp. sugar

STEP 1.Prepare the meat and marinate for about 1 hour.

STEP2.Heat the fry pan or wok. Add 1 tbsp. peanut oil and swirl garlic around to flavor the oil. Remove garlic and quick fry drained meat to insure uniform browning.Remove meat;set aside. Clean wok with paper towels.

STEP 3.Add 2 tbsp. peanut oil and swirl peeled gingerroot around in oil. Add the pea pods and stir fry for a few seconds before adding salt and water. Cover the wok and reduce heat to medium. Cook for a few seconds. Remove cover. Add water chestnuts and sugar;stir,fry for 1 minute. Add cooked meat and stir. Transfer to a serving dish. Keep warm.Serves 6.
