6 cups chicken stock
1 can drained bamboo shoots 2 cups broken(cleaned) chinese cabbage parsley 1 cup thinly sliced cooked pork,cooked in chinese fashion |
mushroom pieces
1 slice ginger root 1 tbsp. oil NOTE cut pork in 1" x2" x1/8" slices |
Heat oil in large soup pot. Swirl ginger slice around for 1 minute to flavor oil. Remove. Add cooked pork and stir for 1 minute. Add chicken stock and heat. Add cabbage, bamboo shoots,parsley and mushrooms. Simmer, covered, for 20 minutes. Taste for flavoring ans serve.
Watercress may be substituted for cabbage.
