FILLING INGREDIENTS
4 cups minced cabbage 1/2 cup fine cut celery 1/2 cup minced shallots 1 cup diced cooked chicken (or pork,shrimp,lobster,crabmeat or ham) 1 tbsp oil 1 tbsp soya sauce salt and pepper |
DOUGH
2 cups flour 1 beaten egg 1 tsp. salt 1/2 cup cold water -------------- peanut or corn oil plum sauce soya sauce |
STEP 1.Blend filling ingredients thoroughly. Set aside.
STEP 2.Prepare dough. Place flour in a large bowl. Add beaten egg white and salt. Blend in water. Mix until dough reaches the consistancy of a ball. Let stand for 2 hours-then roll to a thickness of a sheet of paper and cut into 4" squares.
STEP 3.Put 1 1/2 tbsp. filling on each square of dough. Do not let edges get wet. Work quickly. Fold over and press sides together after dampening with a little egg white.
STEP 4.Heat oil to 375F. Fry rolls for 4 to 5 minutes a few at a time, turning once. To freeze, cook 1 minute only;freeze when cooled and fry as above when desired.
Serve with plum sauce and a few drops of soya sauce.
