China; Garlic Pork Spare Ribs Foreign Cookery

4 racks of spare ribs(about 4 lbs.)MARINADE
1/3 cup soya sauce
3 tbsp. vinegar
1/3 cup honey
2 tbsp. sherry
1 tbsp. sugar
1/2 tsp. powdered ginger
6 minced garlic cloves
1 can consomme

2 tbsp. cornstarch and water paste

(1) Cut the ribs into individual portions.

(2) Mix the ingredients for the marinade and place the ribs in it for 3 to 12 hours, turning occasionally. Remove ribs and pat dry.

(3) Heat oven to 400F. Put ribs on a rack in a roasting pan.

(4) Add the cornstarch-water mixture to the marinade and in a saucepan,heat to boiling point. Reduce and simmer for a few minutes to thicken.

(5) Put ribs in the preheated oven. Cook for 1 hour, basting 3 or 4 times with thickened marinade.

(6) Transfer ribs to a casserole. Pour over remaining thickened marinade. Cover and bake at 350F for 20 minutes, stirring once or twice.

Serves 8 to 10 with other dishes.
