1 or two eggs
6 to 8 ribs of celery |

Mix the eggs with a fork until well blended. Heat an omelet pan; add oil and heat. Fry the egg in one piece as a crepe. Remove from heat and cut into thin strips. Set aside.
Wash the celery and remove the ribs from the celery stalks. Cut the celery into 1" pieces on a slant. Put in boiling water and cook about 5 minutes. (keep the green color). Drain and immerse in cold water to cool completely. Drain. Add salt and sesame oil and toss. Add egg strips; toss and serve as a side dish.
