China; Lemon Chicken Foreign Cookery

2 chicken breasts,skin removed and deboned
1 qt. peanut oil for deep frying
BATTER
1 cup flour
1/2 cup cornstarch
1 tsp. baking powder
3/4 to 1 1/2 cups water
1 tsp. veg. oil
MARINADE
1 tsp. salt
2 tbsp. sesame oil
1/2 cup white wine
LEMON SAUCE
1/2 cup fresh lemon juice
8 tbsp. sugar
1 1/3 cups water
1 tbsp. cornstarch blended with water
dash of ketchup
lemon slices

STEP 1. Stir ingredients for batter until the batter is smooth and the consistancy of a ribbon stream.

STEP 2.Marinate the chicken breasts for 1 hour;drain.

STEP3.Mix water,lemon juice,sugar. Pourinto a saucepan and bring to a boil.Add cornstarch mix and blend. Stir over heat until mixture thickens. Add ketchup,stir and turn off heat. Set aside.

STEP 4.Heat oil in a deep sided skillet to a very hot temp.( 375F). Dip each piece of chicken into batter; let excess drip back into bowl. Slip each breast, one at a time, into deep oil. Fry 5 minutes per piece. Remove. Drain on paper towels. When all pieces are cooked, cut into 1" x5" pieces.

STEP 5.Cut a lemon into thin slices and put in the lemon sauce. Remove, reheat sauce. Arrange the chicken pieces on a warmed platter. Pour over hot sauce. Decorate with a border of lemon slices and with some down the middle. Serve immediately.
