China; Lizzie's Chicken Rolls Foreign Cookery

1 chicken breast
bits of roast pork
little cooked shrimp(opt.)
scallions
2/3 cup flour
2/3 cup cornstarch
1 tsp. baking powder
vinegar
oyster sauce
light soya sauce
sugar
oil
extra cornstarch

(1) Prepare chicken breast: take out bone and slice thin for rolling; keep in one piece ( butterfly?). Place pork, shrimp, scallions on the filet. Roll up.

(2) Prepare batter: mix flour and cornstarch. Add baking powder. Mix with water to a batter consistancy.

(3) heat oil for deep frying.When ready add a sprinkle of vinegar to the dough.It bubbles.

(4)Dip roll in batter and carefully place in hot oil. Fry until it is brown.Serve 1 roll per person.

Serve with oyster sauce.

OYSTER SAUCE

Mix 1 part commercial oyster sauce with 1 part boiling water. Add light soya, sugar, and a little oil. Mix 1 tsp. cornstarch with a little water. Add to the sauce and mix .Heat to thicken.
