1 1/2 lbs. med. ground beef
1 cup bread crumbs 1 egg,slightly beaten 1 onion,finely chopped salt& pepper 2 tbsp. crisco oil 131/2 oz. can pineapple chunks,drained,1 cup of juice reserved 1 cup diced celery 1 cuke,sliced(optional) 1 large tomato,cut in wedges |
1 green pepper cut in wedgws
1 med. onion,sliced 1/2 cup vinegar 1 cup sugar 1/2 tsp. salt 2 tsp. soya sauce 1/4 tsp. pepper 1/2 tsp. ginger 3 tsp. cornstarch 1 tbsp. water |
Finely chop the onion.Beat the egg and combine the onion,egg, bread crumbs and beef and blend thoroughly. Make into 1 1/2"diam. meat balls.
Heat a fry pan to 300F;add oil and lightly brown pineapple chunks and vegetables; then remove from pan. Raise heat to 350F and brown the meat balls on all sides.
Combine vinegar,sugar, pineapple juice and seasonings. Add to meat balls and simmer for 10 minutes. Then add pineapple and vegetables. Continue to cook until meat is done.( At this point cool and freeze if desired. When ready to use, thaw and reheat).
Mix the cornstarch with water and add to liquid to thicken. Cook until juice is clear. Serve with rice and other Chinese food.
