China; Potato Slivers with Peas Foreign Cookery

4 potatoes,peeled and julienned
peanut oil
Szechuan pepper
salt
vinegar
frozen green peas

Potato slivers with peas made by Chow Mei Yu December, 1985

Julienne the potatoes into 1/4" square or less and about 2 1/2" long pieces. Store in cold water. When all potatoes are prepared, bring some water to a boil; salt and add the potatoes and boil about 10 to 15 minutes until clear. Drain; rinse with water and drain again. Heat oil in a fry pan. Add a little sezechuan pepper, if desired. Wait 2 or 3 minutes. Pour oil over the potatoes. Add salt and vinegar to taste. Toss the mixture,gently. Prepare the peas. Add some to the potatoes. Put in a serving dish and garnish with more peas.
