China; Singapore Mi Fon Foreign Cookery

1/2 pkg. rice noodles(mi fon)
2 onions
2 green pepper
2 scallions
pan fried shrimp(opt.)
2 to 3 tbsp.peanut oil
salt
wine
1 tsp. sugar
Chinese roasted pork,thinly sliced (optional)
2 1/2 tsp. curry powder
1 tbsp. dark soya
1 tbsp. light soya

CURRIED RICE NOODLES WITH SHRIMP AND PORK-LIZZIE'S

Cook the rice noodles in boiling salted water until soft.( about 5 minutes or more) Drain and rinse with cold water. Slice onions and green pepper long and thin( about 2"). Heat a heavy skillet and add peanut oil. Heat. Add onion and green pepper and a little water; cover and cook for 2 minutes. uncover to boil off the water. Add salt to taste. Remove onion and pepper and set aside.Slice the scallions long and thin ( about 2").Fry onions , pork and a little wine. Add dark soya sauce and1 tsp. of sugar. Fry for 1 minute. Set aside with the green peppers and onions. Make a paste of curry powder and 2 or 3 tsp. water. Put oil in skillet,heat to 200F; add curry paste and fry for a few minutes carefully to avoid burning. Add cooked noodles and mix together with chopsticks. Add light soya sauce and toss. Mix all ingredients together in the skillet and just heat through. Put in serving dish. Serves 4 to 6.
