1 cup long grain rice
2 tbsp. peanut or corn oil 3 tbsp. soya sauce |
2 tbsp. chopped scallions
2 tbsp. diced pimiento 1/2 tsp. sugar |
Place rice in a strainer and rinse thoroughly under cold running water. Drain.
Have ready 3 or 4 cups of boiling salted water.Gradually add rice, maintaining boil. When water is boiling again, stir rice so it doesn't bunch up. Reduce heat so that a simmering boil is maintained. Do not stir rice while it is cooking;cover loosely. Cook for 20 minutes. Strain rice. Put in warm water and strain again. Allow to stand in the strainer for 10 minutes. Toss to separate grains.This can be done ahead of time.
In a fry pan, heat the oil and slightly brown chopped scallions or onions. Reduce heat to simmer and stir in the soya sauce, pimiento, and sugar. Add rice and thoroughly stir. Season with salt and pepper. Keep warm until serving time.
