China; Spare Ribs Oven BBQ Foreign Cookery

1/3 cup soya sauce
1/3 cup honey or maple syrup
3 tbsp. vinegar
2 tbsp. sherry
1 tbsp. sugar
1 tsp. powdered ginger
1 1/2 cups beef broth
2 large minced garlic cloves
3 lbs. spare ribs cut into serving pieces
2 tbsp. cornstarch;water

SHEW PYE GULT (Oven Barbecued Spare Ribs)

In a bowl combine the soya sauce, honey, vinegar, sherry, sugar, ginger, broth and garlic. Marinate the ribs in the mixture for a minimum of 2 hours ( the more the better) up to 24 hours, basting them and turning them frequently. Drain, reserving marinade. Place ribs on a rack in a shallow roasting pan and bake in a 350F oven for 1 to 1 1/4 hours. Serve with Chinese fried rice and chop suey.

NOTE: Try thickening 1 cup of heated reserved marinade with the water-cornstarch mix and cooking it, stirring constantly, for 2 or 3 minutes. Baste the ribs 2 or 3 times with this during cooking.
