China; Stir Fry Veggies Foreign Cookery

2 red peppers cut into 1 1/2" square pieces
2 green peppers cut into 1 1/2" square pieces
4-6 stalks celery cut on a slant into 1/2" thick pieces
6-8 scallions, chopped
10 -16 med. size fresh mushrooms
margerine
peanut oil,olive oil
1 tbsp. cornstarch
1/2 cup red wine
1/2 tsp. soya sauce

Prepare vegetables. Heat 1 tbsp. olive with 1 tbsp. margerine

(350F). Fry mushrooms for 3 to 4 minutes until well browned. Set aside. Clean pan with paper towels. Heat and add peanut oil. When heated add the vegetables and saute until softened. Meanwhile dissolve cornstarch in wine and stir. Add to the cooked vegetables and stir for 1 minute. Add soya sauce to taste. Add mushrooms.Put in prewarmed bowl and keep warm until serving time.

NOTE:Make 2 or 3 thin omelets; cut in strips and garnish at the last minute.
