3 lbs. lamb, cubed
3 slices salt pork 12 small white onions 6 large potatoes, peeled,diced 1/4 cup chopped parsley |
1/2 cup flour
1/2 tsp. thyme leaves 1 tsp. salt 1/2 tsp. fresh ground black pepper |
Place half the meat in the bottom of a stewing pot. Top with a layer of half the salt pork, onions, potatoes and parsley. Repeat with the rest of the meat and vegetables. Combine flour, thyme, salt and pepper with 4 cups of water. Pour over meat and vegetables. Bring to a boil, reduce heat, cover and simmer for
1 1/2 hours. Stir well, cover again and cook for 30 minutes. Serves 6.
Serve with Irish soda bread.
