Mexico; Mole Pablano Foreign Cookery

1-10 lb. turkey,cut up
2 onions, peeled
2 stalks celery
1 cup butter
3 tortillas
2 green peppers,seeded
6 garlic cloves
2 cups almonds, blanched
1/4 cup sesame seed
1 tsp. anise seed
3 oz. unsweetened chocolate
2 cups canned tomatoes
3 tbsp. chili powder
1/2 tsp. ground cinnamon
1/2 tsp. ground coriander
1/4 tsp. ground cloves
1 tbsp. salt

Put turkey, onions, celery and salt in a pot with water to cover. Bring to a boil, reduce heat, cover and simmer for 1 hour. Remove turkey and drain well. Strain broth and reserve 3 cups. Saute turkey in 1/2 cup of butter until brown. Chop tortillas, peppers, garlic, almonds, sesame seed and anise seed, using fine blade of food chopper. Stir in chocolate, tomatoes and spices. Melt remaining butter, add vegetable mixture and cook over low heat, stirring constantly, until well blended and hot. Add the broth, mix well and pour over turkey. Cover and simmer for 2 1/2 hours. Serves 6 or more.
