India; Burnt Tomato Chutney Freezing & Preserving

8 large tomatoes
rind of 1/2 lemon
2 tbsp. chopped onion
2 tbsp. chopped green ginger
1 tsp. salt
1/8 tsp. pepper

Burtha Tomater Chutney

Start your broiler at 425F or hot. Place whole tomatoes on a baking tray and broil until skins look scorched. Turn and scorch the other side. Now peel off the skins, cut tomatoes in chunks and put in a blender. Cut lemon rind into pieces(remove the bitter white membrane), and add to tomatoes. Blend several minutes, then toss in onion, ginger, salt, pepper and blend again until mixture is thoroughly combined. Mzkes about 1 quart.
