India; Cauliflower Chutney Freezing & Preserving

1 med. cauliflower
1 1/2 cups salad oil
2 tsp. salt
2 tsp. dtied red pepper
2 tsp. turmeric
2 tsp. ground coriander
2 tsp. dried mustard
1/2 tsp. ground thyme
2 tbsp. vinegar

GOBHI ACHAR

Wash cauliflower and break into little 1" sections. Cook in boiling water for 5 minutes. NO LONGER. Drain and place in a bowl or quart jar.

Mix oil with remaining ingredients, pour over cauliflower and let stand at room temperature for 5 days to mallow.
