India; Raisin Chutney Freezing & Preserving

3 med. tomatoes
1 tbsp. butter or margerine
1 1/2 cups seedless raisins
1/2 cup water
2 whole cloves
1" piece cinnamon
1 tsp. salt
1/4 tsp. pepper
1/2 cup sugar
1 tbsp. wine vinegar

KISH-MISH CHUTNEY

Remove the skins from the tomatoes and chop tomato pulp very fine. Melt butter or marg. in a saucepan, toss in raisins and cook 2 minutes. Now add the tomato pulp and cook over moderate heat, uncovered, 7 minutes longer. Stir frequently.

Transfer to top of double boiler, add water,cloves, cinnamon, salt and pepper. Mix well and cook,again uncovered, but this time over boiling water, for about 1 hour. Last of all stir in sugar and vinegar thoroughly. Makes 2 to 2 1/2 cups. Serve hot or cold.
