India; Spiced Grapes | Freezing & Preserving |
3 cups sugar
1 cup white vinegar 1/2 tsp. cardamom seeds 3/4 tsp. nutmeg |
1/2 tsp. ginger
1/2 tsp. cinnamon 1/4 tsp. sweet basil 4 lbs. seedless white grapes |
Put sugar, vinegar and all the spices in a saucepan. Cook to the boiling point; then boil 6 minutes. Remove from heat and let cool until grapes are prepared. Syrup is very thick at this point. Wash grapes; pat dry and pull grapes off stems. Cut each grape in half lengthwise. Now reheat spiced syrup until very small bubbles appear on the surface. Add the grapes and cook for several minutes. Grapes should be slightly tender but not soft. Ladle into 6 sterilized pint jars and seal. Let stand a day or two to develop flavor.
Delicious flavored and textured relish to serve with meat, poultry or fish.
