Mother's Winter Relish | Freezing & Preserving |
10 large green tomatoes
8 large onions 1 head of cabbage 2 or 3 heads of celery 2 red peppers vinegar to cover 2 lbs. brown sugar |
2 tsp. salt
Combine: 3/4 + cup flour 2 tbsp. mustard 1 tbsp. turmeric cold water |
Put onions and tomatoes through coarse chopper and let drain while putting cabbage, celery and peppers through fine chopper. Put all in a large kettle and nearly cover with vinegar. Boil for 5 to 15 minutes. Add sugar, salt and cook longer until all the sugar is dissolved. Add the flour mixture to the relish and boil it up for a few more minutes.
Put in sterilized bottles, cover with 1/4 inch parrafin wax, cool , cover and store in a cool, dark place.
