3 lbs. stewing beef
one 10 oz. can consomme one 28 oz. can tomatoes 4 large onions,sliced 1 finely chopped garlic clove 1 green pepper,seeded & sliced 5 celery stalks & leaves,cut up 1 bay leaf 1 tsp. thyme |
1 tsp. parsley
1 tbsp. paprika salt&pepper to taste 6 carrots,cut up 1 pkg. frozen peas 1 pkg. string beans(opt.) water flour margerine |
Cut beef in 1 1/2"cubes and dredge with flour to which has been added salt & pepper.
In a fry pan, lightly brown in margerine or butter, sliced onion and garlic. Remove and set aside. Add more margerine to fry pan. Add the floured meat and brown on all sides. Remove to a stew pot. Put tomatoes and their juice in the fry pan and collect up all the goodies stuck to the pan. Pour into stew pot over meat. Add onion-garlic mix and consomme to the pot and enough water to just cover meat. Bring to a boil and simmer about 2 hours.
Now add the carrots,green pepper, celery and spices to the pot and simmer 30 minutes. Taste for seasoning and adjust,if needed.Add the peas and beans and cook 10 to 15 minutes. Thicken with a flour-water roue as desired.
May be served with Czech or American dumplings.
