3 lbs. round steak
1 lb fresh mushrooms 6 new onions OR shallots 2 tbsp. margerine 2 cups sour cream |
1 can undiluted consomme
flour with salt & pepper paprika to taste freshly chopped chives |
Remove all sinew, fat and grissle from beef and cut into 1" cubes. Quickly wash,drain and pat dry the mushrooms. Thinly slice. Finely chop the onions.
Heat fry pan and add margerine;heat to bubbly, add onions and slightly brown. Add the mushrooms and cook on high heat until softened and slightly brown(make sure all the liquid is cooked off).Remove all from fry pan and set aside.
Dredge the meat cubes in the flour-salt& peppermix. In a hot fry pan add more margerine and brown the beef cubes on all sides. Put meat in a stew pot. Add consomme to the fry pan and scrape up all the goodies(deglaze); add to the stew pot with the meat. Simmer the meat and juices for 1 hour or until meat is tender. Stir often. Sprinkle the paprika in and stir. Add the sour cream and the mushroom-onion mixture and stir .Heat through but do not let the sour cream boil. Just before serving,add freshly chopped chives and stir. Serve with prepared rice and vegetables or salad.
