Ground Beef, Meat Loaf Stuffed Meats

1 lb. med. ground beef
1 medium finely chopped onion
2 stalks celery,finely chopped
1green pepper,seeds removed and finely chopped
3 tbsp. butter or margerine
1 can(7 1/2 oz.) mushroom pieces,drained
1/4 cup grated parmesan
cheese (optional)
1/4 cup fresh bread crumbs
2 eggs,slightly beaten
1/2 tsp salt
dash of pepper

Saute onion,celery and green pepper in butter until tender.

Stir in mushroom pieces; set aside.

Combine ground beef,grated cheese,bread crumbs, eggs and salt and pepper. Spread out in a 9" square on waxed paper. Spread sauted mixture over meat, leaving a 1/2" border. Roll into a log by lifting wax paper. Press edges together to seal. Place in a greased loaf pan and bake at 350F for 45 minutes. Makes 4 to 6 servings.

Good with spaghetti and tomato or mushroom sauce.
