2 eggs,beaten
1 cup milk 2 cups fresh bread crumbs dash of salt 1/8 tsp. pepper 1/2 tsp. nutmeg 2 tsp. minced onion |
3 lbs. ground chuck
5 medium onions,sliced 1/2 to 1/2 cup salad oil 3 to 4 tbsp. flour 1/2 tsp. salt 1/4 tsp.pepper 4 cups milk |
Combine eggs,milk and bread crumbs; let stand 5 minutes. With a fork beat the mixture until bread is in fine pieces. Stir in salt, pepper,nutmeg,minced onion and chuck.
In a skillet,saute sliced onions in margerine until golden and tender;set aside on paper towels/ From a tsp.,drop some of the meat in rounded balls into fat in the skillet. Brown quickly. Remove to 3 small casseroles. Repeat until all meat is browned, adding fat as needed.
Stir flour,salt and pepper into fat in the skillet. Add milk slowly,stir occasionaly until thickened. Spoon over meatballs; top with onion. Cool quickly. Cover casseroles with foil and freeze.
To serve, thaw and bake covered casserole at 350F for 30 minutes or until bubbling hot. If taken directly from freezer, bake 1 hour.
