4 good sized pork chops
2 sliced onions 2 oz. butter 4 slices pineapple 1/2 cup pineapple juice |
1/2 cup orange juice
2 tbsp. brown sugar freshly ground pepper heaping tbsp. cornstarch |
Melt butter in a fry pan. Put in onion slices, cook until golden, reduce heat, cover and simmer for 10 minutes. Remove onions from fry pan. Increase heat and brown pork chops on both sides. Remove from pan . Reduce heat, add juices and sugar. Stir. Return onions, pineapple slices and pork to the pan and simmer,covered ,for 45 minutes.
Remove pork chops . Mix a little water with the cornstarch and add to the liquid in the pan. Stir until thickened and bubbly.Return chops to the pan. Place a dredged pineapple slice on each pork chop. Cover pan and simmer another 15 to 30 minutes.
NOTE: This recipe is good when you have leftover pineapple juice (forget the slices if you have none leftover)
